Hidden Gem…Rebel Restaurant

Last summer we had our list of new spots to experience and Rebel made the shortlist.   What a great experience we had!  First, the location is part of its charm.  It sits right on the edge of Globeville and RiNo, directly across the street from a grain elevator, in an unassuming corner building.


You walk into a big open room, long bar and community tables with flea market water pitchers and mix matched plates.  Their small plate menu changes constantly; giving you a chance to experience many noteworthy dishes.  Some menu staples include the pierogi, however, the filling changes along with the menu, as well as the Pig Part of the Week.  We were lucky enough to sample the foie gras pierogi and the pig belly fried rice that first night—unbelievable. After that first meal, my husband decided then and there this was his place.  He wanted to be the “Norm” of Rebel.  As a family it has become our place to eat.  Both of our kids love it.  What kid wouldn’t, they brew their own root beer.

On another outing with our son Max, we had the dehydrated chili cheese dog popcorn—WWHHHAAATTT????  It was so good and unusual that Max had to ask the chef how he comes up with these awesome ideas.  Bo Porytko, said he and Dan Lasiy (Chefs & Owners)  go to Tattered Cover on Mondays and sit in the cookbook section to dream up these fun things.

Rebel is creating food you don’t see on other menus, but you’ll want more of it. I suggest heading to Rebel tonight to see what they have to offer.  If you are lucky they may have the fried kimchi croquettes again—we can only hope.  You may see our little family of four trying everything on their menu and rubbing our bellies.  I promise,  you won’t be disappointed.
